D.E.L.I.S.H
Chicken Chipotle Tacos
4 garlic cloves, minced
2 teaspoons minced canned chipotle chiles in adobo sauce (you can find these in the Mexican Foods aisle at most grocery stores) - add more or less depending on how spicy you want it
1/2 cup orange juice
1 tablespoon Worcestershire sauce
3/4 cup chopped fresh cilantro
4 boneless, skinless chicken breasts (about 2 pounds)
1 teaspoon yellow mustard
Salt and pepper
12 (6-inch) flour tortillas
Option #1
Melt the butter in a large nonstick skillet over medium heat. Add the garlic and chipotle and cook until fragrant, about 30 seconds. Stir in the orange juice, Worcestershire sauce and 1/2 cup chopped cilantro and bring the mixture to a boil. Add the chicken and simmer, covered, over medium-low heat for 12-13 minutes, flipping the chicken halfway through cooking. When the chicken is done cooking, transfer to a plate and tent with foil.
Increase the heat to medium-high and cook the mixture left in the skillet until the liquid is reduced to about 1/4 cup, about 5 minutes. Off the heat, whisk in the yellow mustard. Using 2 forks, shred the chicken into bite-sized pieces and return to the skillet. Add the remaining cilantro to the skillet and toss until well combined. Season with salt and pepper. Serve warm with tortillas topped with lettuce, cheese, tomato, sour cream and avocado.
Option #2
This is how I did it. I started out the same way as option #1 by putting the mixture to a boil. But then I got the crock pot and put the chicken in and poured the sauce over it. I had it sit for 2-3 hours on high just until the chicken is able to shred. I took the chicken out and shredded it. Then, I whisked in the ground mustard into the remaining sauce. I put the shredded chicken back in and just let it soak in the goodness on low. From then on out it doesnt really matter how long. I think I has it sit for about another 3 hours. If you want you can put the whole thing back into the skillet to boil off some of the liquid, I did not do that and they were still DELISH.
I wanted them a little more baja style so for toppings and put cheese (any white cheese), Cole slaw, and avacado. Really for these just about anything would be yummy on them.

Kolby was unable to partake due to him still being sick, am I awful for making them just for myself and having him smell them all day?... nahh I am sure he was loving his sprite and soup:)

Big Things are Happening in Rexburg
My favorite things to get are brownie with almonds concrete or strawberry banana concrete depending on my mood. I never waiver on what grinder I get. It is called "the finer things" and it truly is fine. Well I hope everyone in Rexburg knows how wonderful this is. I hope to hear about your experience at Nielsens :)
